Balsamic Roasted Onions

Roasted onions are flavorful and sweet — and the perfect addition to many dishes, and provide a healthful polyphenol boost to your diet.

Try using red onions to add color and sweetness to salads, mix them with beans or faro for a sweet and savory punch to your side dish, or add them on top of a turkey burger to add a decadent richness. Even if you don’t normally like onions, this balsamic roasted onions recipe may change your mind.

Ingredients
8 medium onions, cut into 6 wedges each – 1/4 cup aged balsamic vinegar
1 tablespoon honey
Freshly ground black pepper
1 tablespoon extra virgin olive oil

Directions
Put the onion wedges in a bowl of ice water and soak for about 2 hours. Drain in a colander for 10 minutes.

Preheat the oven to 400 F. Arrange the onions on an oiled baking dish.

Whisk the vinegar and honey together, and season with pepper. Pour over the onions, tossing gently to coat. Drizzle the onions with olive oil.

Cover with foil and bake for 25 minutes. Uncover and bake an additional 45 minutes, or until tender.

Note:
Onion wedges are great for salads, but you can also cut the onions into rings for a barbecue (like in the image above), or in half-moons for burgers. It may sound surprising, but the way you arrange the food can positively or negatively impact how people respond, so try out different variations and see what you like the most.
