Stuffed Tuna Salad Tomatoes
This is a great recipe that makes for three different preparations, which are all delicious. Try all three and see which you like best or take turns with each version and please the entire family. You’ll be amazed at how well yogurt substitutes for mayonnaise!

Ingredients
1 medium beefsteak tomato
3 ounces canned tuna, packed in water, drained
2 tablespoons plain nonfat yogurt (or yogurt cheese)
Basic, Blueberry or Curried Salad Enhancements
Basic Salad Enhancement
1/4 cup finely diced celery
1/8 teaspoon fine sea salt
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
Blueberry Walnut Salad Enhancement
1/4 teaspoon lemon-pepper seasoning
1 tablespoon dried blueberries (about 17)
2 teaspoons chopped walnuts
Curried Salad Enhancement
1/4 teaspoon curry seasoning
4 tablespoons diced cucumber (about 3″ cucumber)
Core the tomato and cut into quarters, leaving the bottom intact. (You may want to keep the top as a pretty “lid.”) Set it aside. In a medium bowl, mix the tuna, yogurt, and your choice of salad enhancements together. Place the tuna salad on top of the tomato.
Serving Suggestion: Place the stuffed tomato on top of 1/2 cup of baby spinach or salad that has been drizzled with balsamic vinegar or fresh lemon juice.
