Thin Crust Turkey Pita Pizza
Most people have had pizza with chicken as a meat topping but why not turkey? It’s just as flavorful and leaner if you use turkey breast. Some people even prefer the taste of it over chicken. Ingredients
2 whole wheat pita rounds
1 cup low-sodium pizza or pasta sauce
2 garlic cloves, minced
2 Roma tomatoes, diced
1/2 onion, diced
1/2 cup low-fat mozzarella cheese, shredded
6 ounces cooked, diced turkey breast
2 tablespoons fresh oregano, minced
Directions
Using a long serrated knife, split the pita bread in half so you have 4 rounds. Place the rounds on a baking sheet that has been lightly coated for 2 seconds with cooking spray. Toast very lightly with the inner part of the pita round facing up while the oven preheats to 350 degrees. In a small bowl, combine the pizza sauce and garlic. Spread 1/4 cup of the sauce on each pita round. Top with 1/4 of the diced tomatoes and onion, then 1/4 cup of the cheese and 1 1/2 ounces (1/4) of the diced turkey. Sprinkle with 1/2 tablespoon of the oregano. Bake 8 minutes and remove the pizzas from the oven. Allow the pizzas to rest 2 minutes before cutting them into wedges and serving.
Option #1: Make it vegetarian with a twist: Instead of turkey or pizza sauce, puree 1 (10-ounce) can of drained garbanzo beans in a food processor until smooth. Stir in 1/2 tablespoon of extra virgin olive oil, 1/2 tablespoon of lemon juice, 1/4 teaspoon of red pepper, and 1/4 teaspoon of black pepper. Mix well and spread the mixture on cut pita rounds or tortillas. Sprinkle diced Roma tomatoes and a mixture of fresh spinach and basil leaves (cut in slivers) on top. Heat as noted above.
Option #2: Substitute drained and crumbled tofu for mozzarella cheese or use 1/2 cup of each combined.
Variation: Substitute 4 (8″) corn tortillas for the 2 whole wheat pita rounds. Prepare as directed above.
