SuperFoodsRx Turkey Spinach Pita
We love turkey and we love it even more when it’s coupled with spinach and tucked inside a hot pita. If you prefer chicken over turkey, then switch out that ingredient. And if you’re not a meat eater, you can substitute  cheese for turkey. Either way, this recipe makes for a great sandwich or salad!

Ingredients
1 1/2 cups baby spinach
3 tablespoons Ginger Orange Dressing
1/2 can (5.5 ounces) mandarin oranges, drained and rinsed (1/2-2/3 cup approximately)
3 ounces sliced turkey
2/3 whole wheat pita or regular pita; cut off top third
Directions
Place the spinach in a large bowl. Toss with Ginger Orange Dressing and add in the mandarin oranges if you like. Place the sliced turkey in the bottom of the pita. Top with the spinach mixture and serve.
Variation: Serve as a spinach salad with turkey on top and pita bread cut into wedges and served on the side.
Note: Substitute equivalent amount of grilled, poached, or baked chicken for turkey. Vegetarians can use any kind of cheese instead of meat.
