Watermelon & Jalapeño Salsa Recipe
Break away from the tomato! This SuperFood salsa recipe is similar to tomato salsa, but with a sweet and spicy twist that’s deliciously unexpected!

1/2 cup seedless watermelon, cut into 1/2” pieces
1 teaspoon seeded and finely minced jalapeño pepper
1 tablespoon minced scallion
1 tablespoon freshly squeezed lime juice
1 tablespoon chopped fresh mint
Directions
Place all the ingredients together into a bowl, then gently mix; you don’t want to be too rough with it and destroy those beautiful watermelon cubes. Because some watermelons are less sweet than others, you can add a little salt to punch up the flavor. Just make sure to taste it as you go; you can always add more salt, but it’s nearly impossible to remove it once it’s mixed in.
