Basic SuperFoodsRx ‘Vinaigrette’ Dressing
How you top your salad doesn’t have to be complicated. This SuperFood salad dressing recipe is a great base for salad greens, rice, lentil or bean salads. From this basic recipe, you can build many different versions.

Ingredients
3 tablespoons orange, lemon or lime juice
3 tablespoons water
2 tablespoons red or white wine vinegar
2 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
1 teaspoon honey
1/8 teaspoon sea salt
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
Directions
Whisk all of the ingredients together or shake them in a jar with a tight-fitting lid. Use immediately or store in the refrigerator. Can be stored for several days.
To enhance interest and play with the flavors, feel free to replace some of the vinegar or acid with fruit juices; pomegranate or raspberry juices add a great tartness to salads with spicy greens or nutty flavors. If you prepare your dressing ahead of time and let it sit in the refrigerator, it will enhance the flavor. Just make sure to leave it at room temperature for a little bit, then shake or whisk it up before serving to re-mix the ingredients.
