Spicy Peanut Glazed Shrimp
Marinate the shrimp before you head off to work and later make a quick dinner that tastes as if you spent the day preparing it.

Ingredients
1 pound raw large shrimp, shelled and deveined
3 tablespoons freshly squeezed lime juice, divided
1 tablespoon peanut oil
1/4 cup peanut butter
1/4 cup freshly squeezed orange juice
1 clove garlic, minced
1 teaspoon hot sauce
Directions
Place the shrimp in a resealable plastic bag. Combine 2 tablespoons of lime juice with the peanut oil. Refrigerate for at least 2 hours and up to 8 hours. Preheat the grill (or oven) to medium heat. Skewer the shrimp and place them on the hot grill. Brush the shrimp with leftover lime mixture and grill for 2 minutes on each side. Combine the remaining ingredients in a small microwave-safe dish and whisk until smooth. Heat the mixture in a microwave oven on high for 15 seconds and stir. Place the shrimp skewers on serving plates. Drizzle the shrimp with peanut sauce. Serve immediately.
Note: Shrimp can be served over any salad greens, cooked rice, or cooked whole wheat pasta.
