Wild Salmon Taco with Mango & Avocado
Fish tacos are great but wild salmon tacos are terrific. Why? Because they are a SuperFood, of course. They also happen to be one of the tastiest fish options out there. Try this quick and delicious recipe for yourself and see.

Ingredients
1/2 pound (7-8 ounces) wild salmon fillet, skin removed, cut into 1/4″ strips
1/2 teaspoon ground cumin
1/4 avocado, peeled and cut into four 1/4″ strips
1/2 cup chopped mango
1 cup fresh baby spinach
2 tablespoons fresh tomato salsa
2 (8″) whole grain tortillas (or 4 small soft or hard corn tortillas)
Directions
Sprinkle the wild salmon with cumin. Grease a sautĂ© pan for 4 seconds with extra virgin olive or canola cooking spray. Place the pan over medium-high heat. When it’s hot, add the wild salmon and sautĂ© 3 to 5 minutes or until it’s opaque. Fill each tortilla with half of the salmon, 2 slices of avocado, 1/4 cup of the mango, 1/2 cup of the spinach and a tablespoon of salsa. Fold the tortilla into a roll and secure with a toothpick if necessary. Serve immediately.
Tip: Mango purchased in a jar in the fresh produce section is a quick and easy way to keep mango on hand.
