Lime – Pecan Crusted Turkey Breast
Delicious for lunch or dinner, this recipe also makes for some great leftovers.
1¾ pounds turkey breast
2 medium limes, zest and juice
1 tablespoon Dijon mustard
2/3 cup coarsely chopped pecans
Freshly ground black pepper
Preheat the oven to 375°F. Place the turkey breast in a roasting pan. Whisk together the lime juice and zest, mustard, pecans, and black pepper. Pack the mixture on the top of the breast to create a crust, and roast until the turkey is heated through and the pecans are lightly browned. Check after 20 minutes. If the nuts don’t brown well, put the breast under a low broiler for a few minutes more.
