Lime – Pecan Crusted Turkey Breast

Lime Pecan Crusted Turkey Breast

Delicious for lunch or dinner, this recipe also makes for some great leftovers.

1¾ pounds turkey breast
2 medium limes, zest and juice
1 tablespoon Dijon mustard
2/3 cup coarsely chopped pecans
Freshly ground black pepper

Preheat the oven to 375°F. Place the turkey breast in a roasting pan. Whisk together the lime juice and zest, mustard, pecans, and black pepper. Pack the mixture on the top of the breast to create a crust, and roast until the turkey is heated through and the pecans are lightly browned. Check after 20 minutes. If the nuts don’t brown well, put the breast under a low broiler for a few minutes more.

Why We Love It
Turkey is really versatile, allowing it go with almost any side dish, but the crunch and flavors in this lime pecan crusted turkey breast makes it seem absolutely decadent. You can vary up the flavors by substituting almonds or cashews for the pecans. We enjoy quickly sauteing some red bell peppers or zucchini in a pan with garlic and olive oil — and red pepper flakes if you like the heat — to go with this dish. But, best of all (at least to us) are the leftovers.

Roasting a turkey breast means you’ll always have this SuperFood on hand for sandwiches or snacks. While buying package deli meat is great, by preparing turkey breast using the recipe above, you won’t have as many preservatives or sodium added into it. Our chefs suggest you buy organic turkey, saying that it does make a difference in the flavor.
