Serving Size: 2 croquettes (or 1 burger)
Volume: 4 croquettes, each 3″ wide by 1 1/2″ tall
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
1 1/4 cups cooked, diced chicken (6 ounces cooked)
1/2 cup soft whole grain bread crumbs
1/3 cup Yogurt Cheese
1 green onion, finely chopped
1 teaspoon poultry seasoning
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
3 tablespoons dry whole grain bread crumbs (can be seasoned or plain)
2 lemon wedges
Paprika or cayenne pepper for garnish
Preheat the oven to 450 degrees. Combine the chicken, soft bread crumbs, yogurt cheese, onion, black pepper and poultry seasoning. Form the mixture into 4 croquettes. Place the dry crumbs in a shallow dish and coat the croquettes. Place them on an ungreased baking sheet and bake for 15 minutes. Serve the croquettes warm with lemon wedges and a sprinkling of paprika or cayenne pepper.
Note: If the mixture seems too wet, add more soft bread crumbs.
Alternative Preparation Method: Substitute cooked turkey for chicken or drained, canned salmon.
Fast Option: Mix chicken, yogurt cheese, onion, poultry seasoning, and pepper together ahead of time. At the last minute, add soft bread crumbs and proceed as above.
Burger Option: Instead of forming 4 small croquettes, form 2 “burgers.” Increase baking time to 30 minutes.
Why We Love It
This delicious recipe is really several different recipes in one. You can replace chicken with turkey sometimes or even salmon, and if you make burgers instead of croquettes, you also have the same options of turkey, chicken or salmon. This is especially good news for parents who’d rather not buy prepared foods and make their own meals but are running out of inspiration. Good news is that kids love anything breaded. In fact, everyone’s sure to love these chicken croquettes.
