Halloween Monster Dip

Candies and Halloween go hand-in-hand, but not every snack at this time of year needs to be sweet. In fact, of the healthy Halloween dips out there, this savory snack is really delicious and easy to serve at any time of year.

Servings 10

Prep Time – 10 minutes

Ingredients
1 cup fresh or frozen shelled edamame (soybeans)
3/4 cup California walnuts
1/2 cup lightly packed parsley
1/4 cup plain yogurt
1 small clove garlic, pressed
1/4 teaspoon salt

Directions
If using frozen edamame, rinse under warm water until thawed.

Place edamame, walnuts, parsley, yogurt, garlic and salt in food processor. Whirl until smooth.

Why We Love It
This bright green bowl of deliciousness is great as a dip or a spread on sandwiches and wraps. Kids can have fun dipping baked pita chips or their favorite colorful vegetable into this. Try carrot sticks, bright red, yellow or orange bell peppers, cherry tomatoes, jicama strips or zucchini coins.

And even though it’s green, that doesn’t mean it’s exclusive to Halloween. In the right bowl, it will work for Christmas, St. Patrick’s Day, or even a spring gathering of friends.
