Cucumber Yogurt Sauce
Get saucy whenever you’re tired of the same old. This cucumber yogurt sauce goes great on just about any food requiring a condiment. Remember, yogurt is a SuperFood so it’s not just delicious, it’s healthful.
Serving size: 1/3 cup
Volume: 2/3 cup
Prep Time: 5 minutes
Total Time: 20 minutes
1/4 cup finely chopped cucumber (can be grated if desired)
1/2 cup plain nonfat yogurt
1/2 teaspoon finely chopped parsley
1 tablespoon freshly squeezed lime juice
1/8 teaspoon garlic salt
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
Whisk all of the ingredients together in a medium bowl. Cover the bowl and let it stand for 15 minutes before using it. Or make it up to two days in advance, and then cover and refrigerate it. Serving Suggestion: Goes beautifully with Turkey (or Tofu) Meatballs
Why We Love It
This nonfat sauce adds just the right kick to meatballs, burritos—even falafels. It’s also a great condiment for rice dishes or add a little chopped dill to it for wild salmon burgers. So delicious and it’s actually good for you!
