Cucumber Yogurt Sauce
Get saucy whenever you’re tired of the same old. This cucumber yogurt sauce goes great on just about any food requiring a condiment. Remember, yogurt is a SuperFood so it’s not just delicious, it’s healthful.

1/4Â cup finely chopped cucumber (can be grated if desired)
1/2 cup plain nonfat yogurt
1/2 teaspoon finely chopped parsley
1 tablespoon freshly squeezed lime juice
1/8 teaspoon garlic salt
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
Whisk all of the ingredients together in a medium bowl. Cover the bowl and let it stand for 15 minutes before using it. Or make it up to two days in advance, and then cover and refrigerate it. When you are ready to use it, allow the sauce to come to room temperature for 15 minutes before serving. Yield: 2/3 cup.
Serving Suggestion: Goes beautifully with Turkey (or Tofu) Meatballs
