Ginger Grilled Turkey Tenderloin

Ingredients
1/2 pound (7 ounces) turkey tenderloin
2 teaspoons low-sodium soy sauce
1 teaspoon freshly grated ginger
1 teaspoon rice wine vinegar
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon peanut oil
Directions
Place the tenderloin in a shallow glass dish. Combine the remaining ingredients in a small jar with a tight-fitting lid. Shake vigorously until they are well combined. Pour the mixture over the tenderloin, cover, and refrigerate for at least 2 hours. Remove the tenderloin from the marinade and discard the marinade. Grill the tenderloin over medium-high heat for 5 minutes on each side. Cover and continue to cook for 10 minutes more or until the tenderloin has reached an internal temperature of 165 degrees. Cover loosely with aluminum foil and let it rest 10 minutes before slicing and serving.
Why We Love It
We love turkey over pork any day of the year! It’s healthier but just as tasty, especially with the flavor-pop of the ginger marinade. The prep takes a little time and you need to let the tenderloin marinade for at least 2 hours, but this cooks up really quickly, so making dinner is a snap.
