Egg Frittata with Cherry Tomatoes, Spinach & Cheese

Ingredients
1 egg
2 egg whites
1 tablespoon soy milk or nonfat/low-fat milk
1 1/2 tablespoons grated cheddar or other cheese such as feta (1 rounded tablespoon)
1/8 teaspoon black pepper (3 good cranks of the pepper grinder)
4 cherry tomatoes, cut in quarters (or whole)
1/2 cup fresh chopped spinach (or 1/4 cup frozen, thawed, and mashed between paper towels to remove excess moisture)
Directions
In a medium bowl, whisk together the egg, egg whites and milk with a fork for 30 seconds. Mix in the cheese and pepper. Fold in the tomatoes and spinach. Grease a 1-cup oven-safe ramekin with cooking spray for 1 second. Pour the egg mixture into the ramekin. Bake 20 minutes in toaster oven at 375 degrees OR place in a microwave for 60 seconds or until done. Serve immediately with: 1 slice of whole grain toast (80-100 calories/slice) and 1 tablespoon all-fruit preserves (low sugar/no sugar added).
