Black Bean & Mango Salsa

Ingredients
1/2 cup black beans, drained and rinsed
1/4 cup chopped mango
1 teaspoon seeded and finely minced jalapeño pepper (see tip below)
1 tablespoon minced scallion
1 tablespoon freshly squeezed lime juice
1 tablespoon chopped fresh cilantro
Directions
Mix all of the ingredients together. Serve the salsa as a condiment alongside your favorite foods, such as grilled salmon or turkey, or as a snack with whole grain crackers.
Tip
Wear rubber gloves when mincing jalapeño so that you don’t get the capsaicin on your hands.
You can create many variations of a salsa by changing the fruit or vegetables used in them. For instance, you can easily replace mango with pineapple, even melons. Get creative and decide which versions you like best.
