Super Berry Salad

A berry SuperFood salad is always a good choice for a meal or side dish. This particular summer salad is loaded with flavor and combines the best ingredients for a tart, slightly sweet, refreshing, and healthy show stopper that will have your family begging for more.

Serves 4

1 6-oz. bag baby spinach or mixed greens
1 cup strawberries, hulled and quartered
1 cup blueberries or raspberries
1/2 cup almonds, sliced
1/2 cup SuperFoods Basic Vinaigrette dressing

Toast the sliced almonds in a dry pan, over low heat, until they are fragrant and slightly browned. This will release the almond’s oils and bring out more of their nutty flavor. Set aside in a dish and let cool.

Put greens into large salad bowl. Gently add the berries, being careful not to crush the berries when they go in. Toss salad with dressing. Sprinkle with almonds. Enjoy!

To make the most of this salad, adapt the basic salad dressing by using more citrus ingredients (more orange, grapefruit, lemon, or lime juices) rather than a traditional vinegar. Add a few chunks of goat cheese for a wonderful and healthy creamy addition.
