Bean and Veggie Burrito Recipe

1 (6-8”) whole wheat tortilla
1/2 cup black beans, no added salt
1/4 cup chopped tomatoes
1/4 cup fresh spinach, whole or chopped
1/2 medium green bell pepper, sliced
3 tablespoons mild Cheddar cheese, shredded
3 tablespoons salsa
Place the tortilla on a serving plate and layer it with the beans, tomatoes, spinach, and green peppers. Sprinkle it with cheese and spoon on the salsa. Roll the tortilla into a burrito by folding one end up 1/3 of the way, turning and rolling from the filling side across the burrito. Microwave the burrito for 15 seconds and serve immediately.
Variations: Two small corn tortillas can be substituted for the whole wheat tortilla. Feel free to add other veggies.
