A dark caramel-colored honey from a small beekeeper in southern California. Rich strong flavor that lingers a bit. If youâre a honey lover youâll enjoy this unfiltered, raw, wildflower honey. Like many raw honeys, there may be a thin layer of crystalization at the top of the container. Itâs perfectly normal and wonât effect the taste or the nutritional quality. This rich flavored honey is a great ingredient in baked goods, on muffins and added to your favorite non-fat yogurt.

Honey contains at least 181 known organic compounds, and its antioxidant properties come from certain phenolics, peptides, organic acids, and enzymes it contains. Honey also contains salicylic acid, minerals, alpha-tocopherol, and oligosaccharides. Oligosaccharides help increase the number of beneficial bacteria in our digestive system, reduce levels of toxic metabolites in the intestine, help prevent constipation, and help lower cholesterol and blood pressure. Tests have shown honey’s antioxidant qualities vary depending on the floral source of the honey, as well as how it was processed. In all cases, itâs the raw, unfiltered, unprocessed (non-pasteurized) honey that has the real healthful benefits. In general, the darker the color of the honey, the higher the level of antioxidants.
