Wheat germ is the embryo of the wheat berry (which is a wheat kernel that has not been heated, milled or polished). With only 2 tablespoons you get 4 grams of protein and 2 grams of fiber, 41 micrograms of folate and a third of the RDA of vitamin E, along with high levels of thiamin, manganese, selenium, vitamin B6 and potassium, as well as reasonable levels of iron and zinc.
Wheat germ is also one of the few plant-derived sources of omega 3s. And it contains phytosterols which help cholesterol levels.
