Just as you would with any type of kabob, always soak the wooden skewers in water for a half hour to prevent the wood from catching fire and falling apart.
You can cook wild salmon, shrimp, scallops or any kind of cold water fish that won’t fall apart. Let your seafood marinade for at least 30 minutes.
For a marinade, mix lemon juice and your favorite sauce. Or, if you prefer to keep it simple, just use extra virgin olive oil and lemon juice with or without garlic.
Cook for 4-5 minutes on each side. Cook vegetables on separate skewers as they take longer to cook.
Grilled Mini Sweet Peppers
Simply thread the peppers on a sewer and place them on the grill. How easy is that! Not only do these roasted peppers taste great, they are so colorful and beautiful.
Watermelon Aqua Fresca
You can get your fruit and iced tea all in one drink. All you need to do is put 4 cups of watermelon in a blender until smooth. Mix in 3 cups of iced tea (however you like to prepare your iced tea is fine). Refrigerate the mix for at least an hour to allow the flavors to blend together nicely.
