Who knew that you could prepare turkey with an Asian flair! This is a delicious and fast recipe that’s perfect for the whole family. Kids will love wrapping up their food into the lettuce leaves. And you have two ways of eating it: with or without rice, depending on which you prepare or if you are watching your weight. Enjoy!
1/4 cup fish sauce
2 garlic cloves
1 2″ piece of ginger
1 bunch scallion
1 tbsp extra virgin olive oil
1 tsp seafood seasoning (like Old Bay)
1 lb ground turkey meat
1 cup diced pineapple
1/2 cup cilantro
Mince 2 garlic cloves and a 2-inch piece of peeled fresh ginger. Slice one bunch of scallions and separate the green and white parts. Add extra virgin olive oil to skillet on medium heat. Add your ginger, garlic and scallion whites only. Cook for about 5 minutes. Add in a teaspoon of seafood seasoning (Old Bay) and coat the vegetables. Add in the turkey meat. Break it up into small pieces and cook for 5 minutes before adding in the scallion greens. Add in the fish sauce. Cook until all the liquid is absorbed and the turkey looks brown. Add in a cup of diced pineapple. Last ingredient to add is the chopped cilantro and the juice from 2 limes. Stir until all the ingredients are blended well.
You can either mix this with rice and fold it into lettuce leaves or eat it without rice. Both versions are absolutely delicious!
