CookSimple is just that and more. They take red and black beans, add in quinoa, some veggies and spices and you get the makings of a terrifically fast and delicious chili. All you need to do is add a can of diced tomatoes and either water or a mixture of water and dark beer, and in less than 30 minutes you have chili. You can add ground turkey if you’d like but the quinoa gives you the texture of ground meat, without all the fat. And quinoa provides protein, fiber, copper, iron, magnesium, phosphorus, zinc and folate too.
Beans, one of the original SuperFoods, are key to this chili. We like beans because they are a great source of protein, fiber, vitamins and minerals, and they’re low fat. They’re also a superb source of copper, iron, phosphorus, magnesium, potassium, folate, and thiamin. And black beans have high levels of polyphenols which act as antioxidants.
Also, there are dried peppers, zucchini, and spinach in this Cowboy Chili although we don’t think you’ll actually taste them but you’ll get their nutrition. CookSimple uses their special spices, including SuperFood cinnamon, to give their chili just the right flavor.
There are 4 servings in each box. And with the dry mix alone you get 7 grams of protein, 6 grams of fiber, 300 mg of sodium (which is a bit high but if you’re not on a sodium restricted diet just compensate in other ways during your day) and only 140 calories. It also gives you vitamin A and C and iron.
You should always have a box of this yummy Cowboy Chili in your pantry (along with a can of diced tomatoes). With these two items you’ll have a wonderful lunch or dinner in no time at all!
